Pistachio Granola

Ingredients
2 tbsp crunchy peanut butter
110g coconut oil
40g maple syrup
250g rolled oats
130g roasted and salted pistachios, shelled
80g pecans
40g puffed quinoa
100g pumpkin seeds
50g sunflower seeds
60g coconut flakes
45g goji berries
Instructions
On medium heat, mix and melt the peanut butter, coconut oil and maple syrup in a pan and set aside.
Preheat oven to 350° F.
Put all ingredients except for goji berries and pistachios into a bowl. Add peanut butter mixture and mix all together. Spread on a baking sheet and bake in oven until golden brown for 20 minutes, turning it over 2-3 times. After taking the baking sheet out of the oven, add the goji berries and pistachios and let cool completely.
The granola will keep for about 2 weeks when kept in an airtight container.
