Pistachio Cookies
Yield: approximately 1 dozen
Ingredients
1 cup Cake flour
1/2 cup Sugar
1/2 cup Oil
1 Egg
1/2 tsp Baking soda
3/4 tsp Baking powder
1/4 cup American pistachio kernels, chopped
Instructions
Heat sugar and oil in a sauce pan using low heat. Blend the mixture until the sugar turns golden. Remove from heat and transfer sugar mixture to a mixing bowl. When cool, add the egg to the sugar mixture. Blend in cake flour, baking soda, and baking powder and mix into a dough. Divide the dough into small parts and shape them into cookies on a baking tray. Spread pistachio kernels on the top. Bake the cookies at 400⁰ F for approximately 15 minutes until golden.
