Lady Kisses with American Pistachios

Ingredients

For the Lady Kisses:

2 cups flour

2/3 cup butter, slightly softened

⅓ cup toasted American pistachios unshelled, grounded into flour

½ cup grana padano cheese or Parmesan

¾ teaspoon salt

¼ cup powdered sugar

Cinnamon and pepper to taste

Bitter orange marmalade:

2¼ pounds sour oranges (bitter oranges, Seville or Zhi Shi)

2 cups sugar

Sterilized jars for jam

Instructions

For the Lady Kisses:

Knead slightly softened butter with the pistachio flour; add the other ingredients and knead until blended. Roll the dough into balls, refrigerate until firm. Bake in oven at 350° F for 12 minutes.

For the bitter orange marmalade: Squeeze the oranges and set aside the juice, removing all the seeds. Cut the pulp and peels into pieces; blend in a food processor, adding the orange juice. Place in a saucepan and cook over low heat for 6 hours, stirring often. Pack the marmalade into the sterilized jars.

Serve the Lady Kisses with cooled marmalade.
