Vegetable and Pistachio Egg Loaf



1 tbsp olive oil 

1 cup finely blended or chopped pistachios + some for sprinkling on top of dish

1.5 cup spinach

2 small yellow courgettes, sliced

4 organic eggs 

1 cup milk of your choice 

1/2 cup feta cheese (crumbled) 

salt & pepper to taste


1. Preheat oven to 180 C / 350 F

2. In a pan, add olive oil and bring to medium heat on stove top. Wash courgettes and spinach, and place into pan. Cook for a few minutes until softened, set aside.

3. In a mixing bowl, add milk, feta cheese, and egg. Combine thoroughly. Add spinach and sliced courgettes. Chop pistachios into small pieces and add this to egg mixture. 

4. Grease baking dish and add the egg mix. Place into oven and bake for 20-25 minutes until egg is set. Let dish cool before sprinkling crushed pistachios on top. Enjoy!
