PISTACHIO-CHEESE WAFERS

Yield: Approximately 2½ dozen

Ingredients

1 cup Sharp Cheddar cheese, shredded
3 tablespoons Butter or margarine, softened

teaspoon Hot pepper sauce
½ cup Flour
¼ teaspoon Each baking powder and paprika
teaspoon Salt
cup Chopped American pistachios, divided

Instructions

Beat together cheese, butter, and hot pepper sauce.  Combine flour, baking powder, paprika, and salt.  Add to cheese mixture with 2 tablespoons pistachios; mix until well blended.  Shape into a log about 7 inches long; roll in remaining pistachios, pressing into dough.  Wrap in plastic wrap and refrigerate at least 2 hours.  Cut into ¼-inch slices.  Bake at 400°F. about 8 minutes or until edges are lightly browned.
