PISTACHIO CHOCOLATE MOUSSE

 

PISTACHIO CHOCOLATE MOUSSE

Yield: 6 servings

Ingredients

1 package Semi-sweet chocolate morsels
6 tablespoons Unsalted butter or margarine
2 Egg whites, stiffly beaten
1 cup Heavy cream
2 tablespoons Rum (optional)

¾ cup Shelled, roasted/salted American pistachios, chopped
Sweetened whipped cream (optional)

Instructions

Melt chocolate and butter together over low heat; cool.  Fold egg whites into chocolate mixture.  Whip cream with rum until mixture thickens slightly (to consistency of sour cream).  Gradually fold whipped cream and rum into chocolate mixture.  Fold in ½ cup pistachios.  Spoon into serving dishes. Top with dollop of sweetened whipped cream and sprinkle with remaining pistachios. Chill 2 hours.
