Apple & Broccoli Slaw with Pistachios & Tahini Dressing

One of my favorite go-to dishes. And did you know raw broccoli is one of the healthiest things
you can eat? Healthy and delicious, can’t beat that.
1 large broccoli head
1 green apple, I used Granny Smith
1/3 cup shelled pistachios+extra for serving
2 tablespoons tahini
3 tablespoons mayonaise
Juice from 1/2 lemon
Salt and pepper
- Cut the broccoli, apple and cucumber into small pieces and place in a bowl with pistachios.
- In a bowl whisk together tahini, mayo, lemon and a little water to make a creamy dressing. Add the water a little at a time until you have the right creamy consistency. Season with salt and pepper.
- Mix in the dressing and serve with some extra pistachios on top. You can make the dressing up to a week in advance.
